Lavender

I have been doing some research on Lavender. Lavender buds, flowers, leaves and stems have multiple uses.

One of the main cautions about Lavender is allergic reaction.

English lavender has a sweet, exotic flavor and is the variety used most often for cooking.

Lavender flowers make an eye-catching addition to salads
Lavender butter or lavender sugar can be spread on toast
Lavender honey hints of days gone by
Lavender jelly makes a pleasing topper for bagels
Lavender cookies and lavender ice cream are favorites
Lavender vinegar is a nice change to the menu
Lavender can be used along with other savory herbs, such as rosemary or basil

Lavender tea is a favorite for both its flavor and its healing, stress-relieving properties.
Lavender Oil is extracted from lavender plants and is used for perfume.
Lavender Uses around the Home

Lavender stems can be dried and tossed into the fireplace for a scented reminder of summer, during cold months.
Dried lavender flowers can be hung in closets to counteract musty smells.
Scented lavender candles add light, fragrance, and ambience

Lavender can be made into potpourri
Lavender can be woven around/into wreaths
Lavender can be added to floral arrangements
Lavender brooms make eye-catching wall decorations


Common Types of Lavender

English lavender (Lavandula Angustifolia) is a good all-round plant with multiple uses.
French lavender (Lavandula Dentata) is used mainly for decorative purposes.
Spanish lavender (Lavandula Stoechus) is suitable for garden use.

You will need to begin harvesting the Lavender just prior to the flower buds fully opening and when they are of good color. You can simply cut the stems, leaving them long. Lay the stems spread out or bundle them in small bunches and hang upside down to keep the tops straight. Place in a cool, dark well ventilated area to allow for drying and preservation of flower color. Your indented use also plays a role in just when you start to harvest the lavender flowers.

This is my favorite lavender recipe not only do the cookies taste good, the lavender smell in the kitchen from them baking is mmm mmm Good!



Lavender Cookies

½ cup shortening
½ cup butter or margarine
2 eggs
1 1/3 cup sugar
1/3 cup packed brown sugar
3 ½ cups flour
¼ tsp salt
1 tsp baking soda
1 tsp cream of tartar
3-5 Tbls dried lavender
1 ½ tsp vanilla

In a blender or food processor, mix lavender and sugar together. (The sharp edges of the sugar crystals help to slice the lavender buds.) Remove from the processor and set aside. Blend shortening, butter, eggs, sugars, and vanilla. Combine dry ingredients and add to shortening mixture. Mix well. Divide dough into thirds and shape into rolls. Wrap in wax paper and refrigerate for about six hours or overnight. Then, cut slices a little less than ¼ inch thick, place on an ungreased baking sheet and bake a 350F for 5 to 7 minutes, or until the cookies begin to change color. Makes about 6 dozen cookies.
